Oven-roasted spiced chicken thighs
A yogurt and spice coating adds flavour to chicken thighs with a short preparation time. This is an original oven recipe inspired by the broad idea of spiced roasted chicken; it is not presented as a traditional regional dish.

How to make it
- Heat oven to 220°C / 425°F. Lightly oil a baking tray.
- Mix yogurt, lemon juice, spices, garlic and salt in a bowl. Coat chicken thoroughly, keeping raw poultry and utensils away from ready-to-eat foods.
- Arrange thighs in one layer. Roast for 25 to 35 minutes, until the thickest part of each reaches 74°C / 165°F.
- Let stand for 5 minutes, then serve with rice and vegetables prepared separately. Discard any marinade that touched raw chicken unless cooked safely as part of the dish.

Thigh size and oven performance change the timing; use the temperature as the deciding check. If preparing the coated chicken ahead, keep it refrigerated and follow safe raw-poultry storage guidance. The yogurt coating contains dairy.
